A hearty and flavorful stew made with tender pork and chunky potatoes. This delicious comfort food is perfect for chilly nights and will warm you up from the inside out.
Ingredients
Pork and Potato Stew

Directions
Heat olive oil in a large pot over medium heat.
Add the diced pork and cook until browned on all sides. Remove the pork from the pot and set aside.
In the same pot, add the onion and garlic. Sauté until the onion is translucent and the garlic is fragrant.
Return the pork to the pot and add the potatoes, carrots, thyme, bay leaves, chicken broth, and tomato paste. Season with salt and pepper to taste.
Bring the stew to a boil, then reduce heat to low. Cover and simmer for 2 hours, or until the pork is tender and the potatoes are cooked through.
Remove the bay leaves and thyme sprigs from the stew.
Serve the pork and potato stew hot, garnished with fresh parsley.
